Add this to another station Making Vinegar (0.92MB; download) -- Making Vinegar By Linda Bramble There are many different kinds of vinegar, each with its own character but, the most interesting, says food essayist Edward Behr, is red-wine vinegar because it has more depth, more nuance, more flavour to balance sheer acidity. And the best tasting is the vinegar, says Behr, is the one you make yourself. The method is easy: when red wine is left open to air, a white crust forms on the top called “mother” ---this is a sign that vinegar bacteria is present and gradually turning the alcohol and oxygen into acetic acid and water. Use good wine, says Behr, avoid sweet wine. If the wine contains thirteen percent alcohol, add one part water to three parts wine. Make it in a glass jar. Don’t allow contact with metal, fill just than about half way. Don’t seal the jar, put it in a dark, warm place. When the mother forms, remove it carefully and throw away. Use it as soon as it tastes good.
